Pigs are called unclean because of ancient policies designed to prevent people dying. The Abrahamic religions (Christianity to a lesser extent than the others) were created in the Middle East, an area of high temperatures and ard conditions. Pigs don't sweat - it's physically impossible. So any toxin that would have been flushed out with sweat builds up in the skin. Eating such flesh would then poison anyone that ate it. People of that time not knowing how the body works and already superstitious enough to be religious, the pig must therefore be controlled by a demon of some kind that moved into humans who ate of the pig. Other reasons include the fact that pigs will eat anything, even a dead person, so to avoid being spiritually "contaminated" they had to be avoided. Many other aspects of the pig's eating habits have also affected this viewpoint.

Jewish dietary law does not specify that pigs are unclean, but rather, that they are unfit for eating. Pigs are actually just one of countless animals considered unfit for consumption. The actual rule for mammals is that they must have both split hooves and chew their cud. The above answer has nothing to do with Jewish law.
