Not usually. They can't sit on their rears like dogs or cats can because they don't have the agility or flexibility in their hind-quarters like dogs or cats do. It's rare to see a bovine, bull or cow, to sit like a cat or dog can, but it has been seen before. On the other hand, "sitting" could mean laying down with front and back feet tucked underneath, and the animal laying partly on its side, more onto one side of its hip. This is called laying down, though, not sitting.
IM NOT SURE IF THERE IS A SCIENTIFIC ANSWER , BUT MY DOG DOES IT ALL THE TIME. I GUESS ITS LIKE HUMANS FLUFFING THEIR PILLOWS AND PULLING UP THEIR BLANKETS. ITS A COMFORT THING.

If you mean laying down with the dogs as in they are on the floor and you lay on floor beside them, then they will take it as a sign that you are equal to them. Generally, you should try to avoid it, especially while training, so that the dogs will learn to listen to you. In short, if you lay down with them, they are more prone to claim superiority over you.
