According to a transmission mechanic I talked to some cars keep most of the fluid in the transmission. The fluid has to be pumped out and new pumped in at same time. Not sure if this was baloney or the truth since he was trying to sell his $149 Transmission Fluid flush.
The Mercury Sable transmission has a fluid capacity of 12 quarts. You can use any SAE certified automatic transmission fluid.
I have a 1998 Mercury Mystique LS automatic w/ a 2.5 liter V6 and it takes Mercon V transmission fluid. I'm not certain if it is the same for you, you should probably consult your owners manual.

According to the 1997 Mercury Mountaineer owners manual : Your 4R70W automatic transmission capacity is ( 13.9 quarts ) * that of couse would be for the transmission , torque converter , lines , transmission cooler , etcetera *
if the trans is completely empty including the torque convertor about 12 quarts if you are just doing the pan 5 quarts
