The Mass Air Flow Sensor is probably a lesser culprit than some other possibilities in a Ford. Usually the effects would be felt while at speed and trying to accelerate since the micro filament used in many Ford models tends to fail while accelerating (even in park while simply pressing the gas quickly).
The problem is finding the actual source of the trouble if the MAF is not At Fault. Start with the fuel filter and air filter(since they are the easiest to check and the cheapest to replace), then you may want to have the throttle position sensor tested. If neither of these are the problem, you may need to have your starter, battery, and or fuel injectors examined. Without hearing the engine and playing around with it a little bit, it's hard to diagnose this type of problem.
It would also depend on the year it was made and which engine is in the chassis.
If it does turn out to be the MAF, you probably will not be able to buy the part from anyone except Ford.

The MAF helps the engine to calculate the timing of fuel delivery, and spark advance. It certainly could lead to rough idling, but probably would not contribute to a hard start when the engine was already hot.

The Taurus and Sables come off the same assembly line - using many of the same parts. If the engine is the same - same year of vehicle - etc., then it is very likely the engines would be interchangeable.
The first thing that I would check is the wiring and the temp sensor @ the engine. Sorry but I do not know where the sensor is located on the engine. Usually they are not too hard to locate. i would replace temperature sender usual located near front of engine near thermostat housing
The temperature of the water will vary on any vehicle with speed, including on the Taurus. The more an engine runs, the higher the water temperature will be in the radiator. If the radiator is overheating, then there could be a malfunction with a temperature sensor, a leaky hose, or damage to the radiator.

Very ambitious project.Search around the Taurus Car Club site and you'll find some photos of how they did it.
It's likely the vehicle speed sensor on the tranny. go to autozone buy a new one. Shouldn't be to hard to install. (probably the same as a ford taurus?) google or forums for proceedure.
