I don't know if this is the information you are looking for but it might be helpful. There is a cactus plant from Mexico called the blue agave plant. It is related to the lily and is usually found with cactus but it is not a cactus plant. It was considered a sacred plant but it is said that when the Spaniards arrived, they used it to make Tequila. However, manufacturers have found that it is naturally sweet and makes a wonderful replacement for sugar. It is 10% glucose and 90% fructose (a natural form). It does have calories but it is considered a low glycemic index food -- a food that doesn't stimulate insulin production. Hope this helps.

How do you grow stevia?

Stevia is an annual herb. It can be grown from seeds or seedlings. Seeds may be sown in the soil after the last threat of frost is past in your area, or you may start it earlier (about three to four weeks) indoors. Once all threat of frost has passed, plant out in the garden, in full to part sun. Stevia will grow happily in a pot on your deck or balcony but needs lots of water if grown this way. Mine was a very bushy and decorative plant and you can plant them "just for show". Once the plant is starting to bush out you can use the leaves fresh in ice tea and other drinks as a sweetener. At the end of the season, cut the plant and dry for use.

Is stevia safe?

Natives of Paraguay, Brazil, and Argentina have been using Stevia for centuries so it has actually been around for quite some time now. Unfortunately, most people are just now beginning to hear of Stevia as there had been a lot of controversy about it over the years, especially in the Unites States. Japan has been using Stevia since the 1970's and in 2009 in the United States Stevia was finally allowed to be referred to as a natural sweetener, as it is. Stevia comes from the Stevia Rebaudiana Bertoni plant so it is natural and organic. It is very good for you as it contains no fat, gluten, or sugar. It also has no artificial sweeteners or ingredients and can be consumed by anyone, even diabetics as it will not increase their blood sugar levels. Try it out for yourself and see what many benefits there are to using Stevia. Go to www.steviasmart.com and see some of the better stevia available on the market. Stevia has only been out for a very short time. In ten years we will have better information on the product. And the side effects. So we will see.
