Humans have been fermenting alcohol for a very long time. This seems like a trick question, or incomplete, so here's what I know about the Fermetation process.

In the case of Ethanol (the type of alcohol used in beverages): Yeast feeds off sugar, alcohol is the waste product of the yeast feeding off sugar.

Now if you're thinking of brewing your own beer or making your own wine, I would look into it a bit more than asking on the internet...they actually sell starter kits with instructions to make your own homebrew (homemade beer), and im sure the info is out there for wine as well. Its not as simple as throwing some yeast and sugar water together, and if you don't know what you're doing you could end up poisoning yourself or worse.
