As long as you have anti freeze in your car, you'll be fine. If you let your car warm up before running it hard cold air is actually better for it.

Usually not. Injectors give better gas mileage and often a smoother throttle response. Particularly for cold starts, injectors will outperform carbs. Switching from injector to carbs would only make sense for some race applications.

There are many reasons to add a cold air intake but performance and mileage are the two main one. However, you need to know that in application the two work against each other. Too get more performance you need more air AND more fuel so to get one you need the other. Performance intakes help with gas mileage by letting the engine breathe easier, so your mileage increases... AS LONG as you drive the same way you would. So, all things being equal you will have better mileage and better performance with a cold air intake depending on which one you are using it for at the time. Using a cold air intake will allow the fuel to burn more efficiently and use less. However it's not usually a noticeable difference. You may get better mileage if the car is driven conservatively.

Cold air intake (like a K&N) reduces intake restriction, and aftermarket exhaust will help with back pressure, and a programmer. Other mpg basic improvements like maintaining proper tire pressures and not speeding will help with fuel economy.
