The objective given to the troops was to capture the Gallipoli Peninsula and gain control of the Dardanelles. Then, ultimately, push on to Constantinople (now called Istanbul). They would be able to ship supplies to Russia through the Dardanelles, and also flank the Germans if they wished.

Beacuse they were an ally of Germany. They enterted the war as the ANZACs were sailing towards the Western Front and Britain couldn't spare too many troops so they diverted the troop ships to Egypt where the ANZACs trained and then they sailed for Gallopoli. After Gallpoli the Light Horse, etc stayed behind to fight the Turks in Palestine (the infantry went to the western front), still hoping to attack Grmany through the back door.

Why were the ANZACS fighting the Turks?

Australia and New Zealand were part of the British Commonwealth, which was one of the Allies in World War I. The Ottoman Empire was one of the Central Powers. Those facts naturally brought the ANZACs into conflict with Turks. The ANZACs were specifically sent to the Turkish front in Gallipoli so that British soldiers could focus on the Western Front which was closer to London and made maintenance much easier. Giving the command of the Turkish front over to foreign regiments was much easier to justify.
