Bruges is basically one gigantic open air museum. It's beautiful and magical, but boring as hell. One day to see everything really cuts it. Just make sure you see the begijnhof, the swans and go up the tower.
Ghent is beautiful as well, but more alive. You shop and hang out, but you also use the weekend to party. On Thursday it's more student-party style in the Overpoort. On Friday you can catch some cool concerts in Charlatan, Vooruit, Kinky Star or one of the little bars.
The fact that it's all students, makes it dead around Saturday though. But you'll be in Antwerp by then. My home town!
Antwerp is a gorgeous city like Ghent, and has great history as well. Again, great opportunities for parties, clubbing and concerts present themselves everywhere, so use them to the fullest.
