Kingsnakes are very oppurtunistic predators, however I cannot recall a case of them eating fish. They may, but in any case it's not the preferred meal.

You shouldn't - it's a stressful time for the reptile, and it should be kept as quiet as possible, with the absolute minimum of handling. Occasionally, while going through the shedding process, reptiles can get aggressive.
