Well technically before she was named Eve her official name was "Adam's rib" but she thought that was too long and when she became a real human girl because God wanted a friend for Adam she became known as Eve ... because God said so and I believe that's a good enough reason for anything.
The term 'God knows everything' is a misnomer. Yes God does have the ability to know everything. But it is not to be taken literally. The term if taken literally would represent 'sillyness'. The term 'omnicient' is not a Bible term, but a warped concept.
Consider the silliness of it: How many molecules are there in the whole universe? Would God really need to know where every single molecule in the whole universe will be at every moment in all of eternal history; in order for him to be God? You see the silliness of it all?
Example: One of the aspects of the fruitage of the holy spirit is 'self-control'. Therefore God would be the master of 'self-control'.
Now consider us humans: Our mind has the 'potential ability' to come to the very edge of a 'thought'; and then to enter that 'arena of thought' as deep as you might wish to. But because some 'thoughts' are abhorent (ie child abuse / rape / murder / kidnapping / torture / etc etc etc) we CHOOSE -- NOT TO Fanticize in our minds those 'potential abilities'. We excercise 'self-control' over our thoughts.
Since we are 'made in God's image', God would exercise better control over the thoughts of the future he chooses to enter. The thought God would 'enter', would be based on righteous principles; not a random thinking over every stitchin' thing.
The Bible states that God is RIGHTEOUS, JUST, FAIR. It would be none of those IF God KNEW in advance what Adam and Eve would do; and then God tease them by telling them 'not to eat from it'. My goodness. What human would put something evil in front of their child, if they knew full-well what the child would do. This concept of: 'God knows literally every single thing' -- is a silly concept.

Adam and Eve separated themselves from God's perfect world, and brought about physical suffering and pain to Adam and Eve and all people that followed them.
