They have to follow all the laws that everyone else does. Additionally, there are laws that affect them but not others, such as having a bright reflective triangle on the back of their buggies.

Besides that, they voluntarily agree to "laws" of their "Ordnung" or church. These "laws" pertain to dress and conduct unique to their faith, including the well known practice of not using electricity.

For the same reason anyone else might take a door off their house. It might need planed or sanded, or otherwise repaired. Or they might be trying to air out the house in springtime.

I have read something like 85% choose to join church and stay "Amish". I have lived in two Amish communities and I'd say that figure sounds correct. Some families have high retention rates, other families seem to go English.

I think the best condolence message you can give is "You are in our thoughts and prayers." If that is too generic write something from your heart. Lots of people use "I'm sorry for your loss" but how can you be sorry if you didn't cause the loss? I've spoken to many people and they don't understand how people can say I'm sorry for your loss. No, in most cases they are sent to the Amish church that acts as school house, for short school day so they can still do their daily chores.

They are taught only the 3Rs, up to the 8th grade, by a teacher who also has only an 8th grade education.

Yes, Amish can leave their community if they choose but they are usually shunned from the community.
Amish can also be excommunicated from their community if they disobey certain rules. Amish teens are allowed a "Rumspringa", which is a period in which they are allowed to experience the ways of outsiders without any punishment. After this period they must choose to be baptized and become an adult member of the community or leave the church.

Most Amish don't use technology. They see it as a distraction, and they have other religious views about it. Each Amish community has a sort of "rulebook" called an Ordnung that is different for each community- for example, one community might be allowed to have a telephone for the entire community, and for another it wouldn't be so. Also, a lot (NOT ALL) Amish people don't feel comfortable with associating themselves with non-Amish peoples and/or don't feel a need to explain themselves. Some people were Amish when they were younger, though, and have "converted" to a non-Amish lifestyle, so don't be surprised to see answers from once-Amish people.
