F1 cars display extremely high acceleration because of the finely tuned engines and precise and efficient aerodynamic set up. The fastest known F1 cars have been in the range of 325 kmph which works out to around 185 mph. The time taken by a f1 car to reach speeds are:
0 to 100 kmph (62 mph): 2 seconds
0 to 200 kmph (124 mph): 4 seconds
9 to 300 kmph (185 mph): 9 seconds

Harm is relative to how you drive the car. The simple answer is that if you are going to race or drag your stock GT, or any car for that matter, you are creating tourqe on the miving parts that may be in excess of the drivetrains ability to translate it into horsepower at the real wheels. Simply put, that energy has to go somewhere and will shorten the lifespan of the moving parts. Do what you want with your car, but if it is your daily transportation I would think before you slam the accelerator. You will do harm faster so all you are doing is raceing to the mechanic shop.

What ignites the exhaust fumes on race cars to make flames?
race cars run a very rich mixture. when the engine dies, the unburnt fuel in the exhaust system catches fire from the heat in the exhaust pipes. when the engine is refired, the fire blows out. Flames come out the exhaust during the deceleration of a racing car because during wide open throttle the intake manifold and intake port are filled with a homogenized air fuel mixture. When the throttle is suddenly closed the velocity of this mixture stops and the pressure drops into a strong vacuum. This causes the fuel to drop out of suspension (in the air) and return to a liquid state. This liquid fuel is drawn through the combustion chamber and ignites when it reaches the hot exhaust valve and pipes resulting in the visable flames from the end of the pipe.
