I think you mean Halloumi cheese. It is normally made from a mixture of sheep and goat milk, however can be made from cows as well.

Based on what I've read in Wikipedia (and inferred between the lines) it's one of or a combination of several bacteria that convert sugar(s) into lactic acid, which then acts as a spoilage preventative. That's apparently why Slim Jims can be packaged without refrigeration prior to opening.

Just like making yoghurts, you need a starter culture of bacteria and add it to warm milk. The bacteria convert lactose to lactic acid, making lots of it, and resultantly, making lost of curds (the solid part). When it is completely curdled you separate the curds from the liquid whey. Cut the curds and add salt, if wanted. Let them dry and you have cheese.

I think you are talking about Crème fraiche (French for "fresh cream"). It is a soured cream containing about 28% butterfat and a pH of ~4.5. It is soured with a bacterial culture, but is thicker, and less sour than sour cream.

You can kill a person with anything. I work in an artisan cheese store using a cheese cutting wire 8 hours a day, 5 days a week. I usually have 2-3 wires break on me a day under normal proper use. The worst that I have ever had happen to me was..... nothing. A coworker of mine fell over backwards when one broke on her and she landed in the trashcan unhurt. (True story) So yes, you could kill a person using a cheese wire, but not under normal use.

Shredded mozzarella cheese does get moldy, if you let it sit around in conditions that promote the growth of mold (moist, not too cold) for long enough.

no at least i would rather not because it might have a really bad smell and certainly i would doubt it if anyone would keep moldy edam cheese in the thier fridge
