As said above Israel is part of Asia (middle east being more of a cultural group of countries- islamist, than a continent).

That said Israel is at the crossroads between Europe Asia and Africa. This means that while its geographical grouping is definitely Asia, it holds more in common culturally with the rest of europe (It is far less arabic in origin than the rest of the middle eastern countries) - and is treated as a member of europe in some minor ways (e.g. being included in Eurovision song contest). From a flora and fauna point of view Israel is shown to be the central country bordering all three continents, as historically animals from all three continents roamed here, though most of these are now locally extinct.
