French Fries

* 500-625 large russet potato * peanut oil * salt # Preheat oven to 200 degrees. # In a large dutch oven heat oil to 320 degrees. # Peel potatoes and EVENLY cut fries into 1/4" x 1/4" strips of equal length. # Place in a large bowl of cold water as you're slicing. # Drain potatoes thoroughly, removing any excess water. # When oil reaches 320 degrees, submerge the potatoes in the oil. # Working in small batches, fry for 2 to 3 minutes until they are pale and floppy. # Remove from oil, drain, and cool to room temperature. # Increase the temperature of the oil to 375 degrees. # Re-immerse fries and cook until crisp and golden brown, about 2 to 3 minutes. # Remove and drain on roasting rack. # Season with kosher salt. # Once again this is done is small batches and will need to be kept warm in the oven until all potatoes are fried.

There's also a slight difference in that British potato-chips are cut thicker than French Fries, and their surfaces are not fried to crispness so the inner should be tender but still firm.

The version sold by MacDonalds, in the UK at least, is very thin and crispy to hard.

For some perverse reason at least one UK-based crisp manufacturer has been labelling its packets sold in the UK "Potato Chips" (in the US sense) for a few years.

Absolutely not. If it were to take your stomach that long to digest any food, it would eventually expand past it's capacity due to being full. If that happens, it will not be a good day for you. There have been many Urban Myths about things of this nature like swallowing bubble gum is bad because the body cannot digest it or donuts take a week to fully digest. These are just myths, they are not true by any means. Whoever told you this was just pulling your chain or they were misinformed.

French fries do come from manufacturing machines, but they were really made from potatoes. The first potato was small and purple. Ancients used them for telling time and worshiping potato gods. Where the French fry was made you think French, but you need to think again. Believe it or not, the country Belgium made it and called it the American fry. When potatoes were scarce, some people fished, peeled the fish, and woila ! French frish!
