You will have to check with your school, I know a student who did a polish gcse at my school.
You can do extra GCSE's by asking the teacher, whose subject you are interested in, if they can run sessions after school, therefore allowing you to get extra GCSE's whilst still in school. Also GCSE's can be taken in College.

There is a small difference between them. They are both mainly practical courses however the performing arts: acting is usually a BTEC course.

On google, search GCSE Whatever and then the exam board, which is usually either: AQA, Edexcel or OCR.
In the main, universities would be looking for a top GCSE (and subsequent A-level) in English - both literature and language - as well as other "traditional" subjects, including maths, economics and history... depending on what subjects you like and are good at. If I can recommend a single piece of advice though, it would be: do NOT take GCSE/A-level Law. Top Universities will throw this in the bin. Choose "worthier" subjects.
