Yes, you can bleach an unbleached Judo gi.
However, it is not going to come out right. They never do. An unbleached gi is generally used as a "practice" gi or training gi. It also get a funny feel to to it after you bleach it. I highly recommend to keep it unbleached.
If you are trying to bleach it blue, for a competition gi, I also advise not to do it. You must be within a very specific color range of blue for it to be legal (pantone color 265 for us judo geeks).
Why do you say do judo not play judo?
You say "do judo" because it isn't usually casual, and doesnt require a team, just two people. Such as you play football, but you do Karate. The term of "i do" is usually refered to any martial art that is practised, rather then "i play". This could be related to the feeling that to do something is to work and improve, while play is more casual.
While this is true, I disagree. Judo is a sport, a most well known sport at that. And much as you would say play football, you are playing judo as well. Yes, playing is casual, BUT it is used to describe a sport or game, such as judo. Using the term play just like you would say that you play chess, not do it. While you play judo though, it would be like playing in a baseball game, while you would practice to work and improve your skills. Just like at a tournament you would play judo, at a class or in a Dojo you would practice it.
Find yourself a Dojo, bring in tough cloth like rugby jersey for trial class and considered buying yourself a Gi once you are sure to continue with this path.
Judo training usually take quite sometimes before it is usable in real life since it require the judoka to act upon natural reflect which required timely training. However, once your body memorized how to flow, Judo is very good in handling trouble makers without scar and bruise especially when the trouble makers is your drunken buddies.
Judo's primary application is martial sport, and unlike every other sport/art I've seen involving throws, Judo's primary throwing focus is to disrupt the opponent's balance or capitalize on his/her own disruption of balance before executing the throw. This is what enables smaller people to throw larger, stronger opponents, although in the sport all other things are equal and contestants are separated into weight classes (so there are limitations). Judo is still effective in real applications, as hitting the pavement off a good throw is usually a fight-stopper. As a sport, though, it has limitations for self-defense and is best complemented by other forms like boxing and kickboxing/muy-thai. Other arts also have merit, but should be trained as hard as Judo is.

As a second degree black belt in judo I would say that either of the first two would be better because I believe they both involve learning to block strikes and kicks.
