The easiest way would be to just get a few pictures of the item you want to build and just have at it. Every so often just stand back and see if it's going in the direction you want, if not simply change it. Going into creative mode would make it a whole lot simpler to build something that large.

For a map with a gigantic underground cave system use Cheepa as your seed choose biodomes and allow buildings it puts temples above ground and even treasure rooms below ground you will want ladders before entering caves as they go down to lava
