You never twist your ankles while skiing. If you are capable of it your boots aren't fitting you properly. Your ankles shouldn't move. You do roll your KNEES however. That is carving which is fairly advanced skiing. For the begging you will turn by shifting weight from one foot to the other. it depends on what type of skiing your doing. You ABSOLUTELY HAVE TO wear a helmet!!! Even if you are a beginner and you say you will not fall hard enough to do damage you are lying to yourself. Even if you don't fall hard per se, the snow can still be as hard as concrete and sometimes you fall directly on your head, not landing on anything else first (yes, it happens. I've done it many times, it still really hurts with a helmet, don't want to know what it's like without). Or, if you are what you would call an expert and you say you won't fall, again you're lying to yourself. I've been skiing for a long time and I'm pretty good and I still fall occasionally, and when I do it is a full on wipe out, not a simple fall. I hit a tree a few years ago hard enough to permanently damage the tree, four years later there is still missing bark. I am lucky I was wearing a helmet! Here's a stat for you, 14% of ski injuries are head injuries, around 90% of ski deaths are caused by head injuries and around 85%-90% of these people weren't wearing helmets. At my home mountain, Big White, someone died simply because they decided not to wear a helmet, they hit a tree, HARD, and sustained serious head injuries which killed him, which also could have been prevented with a helmet. I think it's a no brainer. Please wear a helmet.
