Why can't edward read bella's mind in twlight?
Because in Twilight she has a shield that protects her from all vampire she just doesn't know it and how to control it. But in Breaking Dawn (4th Book) when she becomes a vampire her special power is having that shield and controlling it and casting it over other people with. In eclipse the book concentates on the love triangle between Bella, edward and Jacob. So basically:
Alice can see that Bella is being followed by Victoria and she's made a coven of new born vampires who are after Bella. and Edward and the werewolves make a treaty so they can fight them together to protect Bella. Jacob really doesn't want Bella to be with Edward and Edward starts to control Bella more to keep her away from Jacob. Edward finally thinks Bella should do whatever is best for her and in the end Bella chooses Edward. The wolves and vamps do manage to save Bella in the end. Bella also agrees to marrying edward. YEY.
