You should roast a turkey about twenty minutes per pound, but more importantly, it should be brought to an internal temperature of 160 degrees Fahrenheit. Do not roast it to that temp though. At about 150 to 155 degrees, remove it from the oven and seal it tightly in foil for about fifteen minutes before serving. The carry over in temp will cause the internal temp to rise to 160 or higher. Stuffing inside a turkey should be removed and either microwaved or baked separately for a short time.

350 for 30 minutes. Your results may vary depending on the wetness and thickness of your dressing. Start with 20 minutes, check it. Take a fork and pull up some of the middle and see if it has the consistency that you want, and if the top is as brown as you want.

Unless you put raw meat, or raw chicken/turkey stock you're safe from food born illness, it's more about getting it to the consistency, dryness and, crust.
