Yes, these preseratives do keep bread from molding, but they are not what you should be eating and are not good for your body. Buy only breads with no preservatives and keep the bread refrigerated. It will last 2 weeks kept cold. Preservatives have an adverse effect on the body. Many people are allergic to these chemicals in our food. They feel bad everyday and don't know why. Buy food with no preservatives and you will see a great improvement in your health.

How fast a bread molds depends on the amount of preservatives in the bread. If a bread has a lot of preservatives in it, it will mold less quickly than breads that don't have preservatives, no matter if it's wheat or white. Wheat breads are more likely to be "natural" and "preservative-free" though.

Perhaps because it is more visible on white than on rye. Rye was not included in the question. Bakery bread does not normally include preservatives. Other commercial breads do include preservatives which prohibit mold growth.
Typically brown bread, because generic brand white bread has hundreds of preservatives and harder white breads such as ciabatta just dry out and don't usually grow mold.
I actually did my last year's science fair on this... In theory, the store-bought bread will mold more slowly than the bakery bread. This is because the store bought bread is baked with all kinds of preservatives to give it a longer shelf life. However, most bakery breads are not.
