If the light is really old or been subject to chemical abuse by the pool water then you will probably have to replace the light. If the light is in good shape you can get a screw extractor from the hardware store just be careful not to strip the threads out!

If the light does not come out then remove the two screws under the light. Remember to pull the light downward grabbing the top of the light. Retain the screws! There are two adjustment screws. One centered above the light and one centered on the side of the light. DO NOT REMOVE THESE SCREWS! It is a pain getting them back in and easy to lose the plastic retaining clips on the back.
