Cakes continue to cook a bit more when removed from the oven because of the heat they retain, so it's better to take them out of the oven just a bit too soon than a bit too late in order to keep them from being dry.

If you're talking about a 'quick' bread made with a batter, rather than a dough, then a little shrinkage is perfectly natural. Your quick bread is probably leavened with baking soda, which creates millions of tiny carbon dioxide bubbles to 'raise' or 'leaven' the batter as it cooks.
