No state in the US requires any formal education or training to work as a veterinary assistant. This is an entry level position in the veterinary medical field and veterinary assistants are generally trained on the job. There are some schools that offer veterinary assisting programs and "certify" their students however many of these are not overseen by an veterinary professionals or professional organizations and are often taught by people with no education or experience in the veterinary field. There are 28 colleges of veterinary medicine in the United States and another 5 in Canada; all will give you a solid education and allow you to become a veterinarian. However, certain schools do have a reputation for focusing on certain areas of veterinary medicine - The University of Florida is known for marine animal medicine and The University of Tennessee is known for wildlife medicine.
It all depends what you want from the college. For example some allow you to travel abroad, some you have to travel quite far to the campus, you also need to look at the grades and experience needed by each vet school.

There are 7 vet schools in the UK; Liverpool, Camridge, Glasgow, Edinburgh, Bristol, London and Nottingham. I think Bristol would be the closest to you however you should also consider which vet schools have the best programs, facilities and staff etc. Hope this helps.
