Cow's milk is generally composed of lipids (monoacylglycerols, diacyglycerols, and [primarily] triacylglycerols); vitamins A, B6, B12, D, D, E, K, thiamine, niacin, biotin, riboflavin, folates, and pantothenic acid; essential fatty acids (linoleic, and linolenic acids); about 33% protein (primarily in the form of casein micelles as as1-, as2-, ?-, and k-caseins; a small amount of whey proteins such as Lactoglobulin); the minerals calcium, phosphate, magnesium, sodium, potassium, citrate, and chlorine; sugars (lactose, glucose, galactose, and oligosaccharides); trace amounts of white blood cells from the animal; and, some bacteria and active enzymes.

whole milk is not actually a high-fat food. Generally, anything over 20 per cent is deemed high fat, but cows' milk usually only contains between 3.7 per cent and 5  per cent fat per 100 ml This compares with 48 per cent for truly high-fat foods, such as double cream.

Goat milk is primarily water, milk fat, and protein.

Generally, goats milk contains significant levels of Calcium, Magnesium, Phosphorous, Potassium, Sodium, and Vitamins A and C.

Goat milk also contains trace amounts copper, iron, selenium, zinc, vitamin E, and folate. But is not considered a "good source" of any of these things.

There have been many convincing studies that a human infants diet that consists primarily of goat milk may result in deficiencies of Beta Carotene and essential B vitamins which are essential for brain health and growth.

Of course, the nutritional content of goats milk all depends on what the goats eat. A diet higher in any of these vitamins or minerals will likely result in higher levels present in the milk. A conversely, a dairy goats diet lacking in any of these nutrients will obviously mean a lower presence in its milk.
