The answer to this question really depends upon which 5 speed transmission you have... there is more than one and if you use the wrong type lube you can ruin the transmission....
Look at the factory gear shift knob....
Does it indicate a Double Low Gear?
OR
Does it indicate an Over Drive Gear?
Each type requires a different and Specific Lube... again if you use the wrong Lube you can RUIN your gear box.... If you have the owners manual it will show you which lubricant you need for your vehicle. One transmission uses a petroleum based lube and the other uses a synthetic.

A 1991 Chevy Camaro with a manual transmission needs Dexron II ATF fluid. It provides lubricant and cooling to the transmission.

There is a plug on the side of the tranny. take it out. If fluid runs out, put the plug back in the hole and get on with life. If no fluid runs out, check your manual for what transmission fluid to use. Fill it till it runs out at the plug a bit. Be sure to use the transmission fluid recommended for Chevy S10 5 speed manual transmissions.
you change the manual transmission fluid in a '99 cavalier simply by removing the transmission drain plug and allowing all the fluid to drain then replace the plug and refill with Syncromesh transmission fluid(that is the fluid recommended by Chevy for use in your transmission) It should take 2 quarts.
