State laws can be different here. You're usually required to give the dealer a reasonable time (probably at least two weeks) past the agreed-upon date before you can cancel the contract.
If the dealer agrees that they can't provide the right color, then there shouldn't be an issue. If they're providing something that a reasonable person would agree matches the color specified by the contract and you just don't like it ("I wanted a brighter shade of red"), then ... beats me, it's probably attorney time.
Once you and the dealer have signed the contract, it is a binding contract agreement and it responsible by law. You can take him to court if he doesn't keep his part of the agreement.
