Your heater core has a leak in it requiring replacement of the heater core. It will continuously leak as it is part of the cooling system for the engine, and is under pressure. Above is true if it is antifreeze and not water. Don't rule out a plugged drain hole in the wiper transmission area or water leak from the body.
Are you sure it is coolant?I would gues heatercore if it leaked regardless of the A/C. But it sounds more like the condensation is not escaping and leaking in because of a plugged line maybe.

If that water is engine coolant, the heater core is leaking.

There is no such thing as Air Conditioning coolant.
If it is soaked with engine coolant, you have a leaky heater core. If it is soaked with justwater, you may have a blocked ac condensation drain.
Wet passenger flood is caused by either a leak in the air conditioning drain line or a leak in the windshield sealant or a coolant leak coming from the heater core.

Either the heater core is leaking or you have a leak at the windshield or the cowl. If the fluid tastes sweet it is coolant and your heater core is leaking.

I would suggest replacing the heater core only if you have a puddle of coolant on the passenger side floorboard. More likely the problem is with the blend door not directing air through the core.
