If you really want to hold a goose it is best to make friends with the animal first. Try to bring him/her a treat on a daily basis, like some bread, seeds, fruit or lettuce. At first, toss the food at the animal and let it eat it at will. The goose will interpret this move as a gesture in good faith.
Do this on a regular basis and even if you don't feed him everyday at least stop by and say hello to him. Let him get to know you and to understand that you are not a threat.
Eventually, he will come closer and closer to you everytime you feed him. And if you are really LUCKY he will come close enough to you that you can pet and maybe even hold him.
