How do you smoke fish on bbq?

Put a rub or marinade on the fish for no more than 2 hours before you put on the smoker or the fish will begin to cook from the marinade itself and become mushy. If you have a true smoker, prepare fire in the firebox so main chamber gets between 210 and 225 degrees F and place fish on foil in the main chamber for approximately 3 hours until internal temperature of the fish is 145 to 150 degrees F. Use charcoal with wood chips or chunks. I start with charcoal and then wet down hickory or pecan wood chunks and place on the charcoal after they ash over. This creates a good smoke.

If barbecue is black, hard and dry, it has been overcooked. I agree - if it is dry, it is usually overcooked. But "bark" is usually black in color and is desirable on Boston butts and brisket and even ribs to a lesser degree. Bark should not be hard though. chili. Not many people like it because it is not chunky like traditional chili. I grew up eating Cincinnati style chili so much, I cannot stand eating traditional chili. Dixie Chili is the best, followed by Skyline, then Gold Star Chili (these are the 3 major chili parlors in Cincy).

How do you make a vinegar based barbecue sauce?

I usually mix half vinegar and half other liquids, beer and lemon juice and oil being the three I use. A good shot of tomato sauce or ketchup gives it some color. Salt, pepper and garlic are a given. I often add dried or minced onion and perhaps some other herbs, depending on the type of meat.

What is a substitute for lighter fluid for a BBQ?

I have used the gel from a can of Sterno. Just smear blobs intermittently on your pile of coals and light. It seems to burn cleaner and is not as "explosive" as lighter fluid.
