I would use two and a half, but since that's not possible, I would get two and have extra batter. Mind you, no matter what batter, a cake/brownie must be 3/4 of the way full. hope this helped:)

Yes you can. I make full size sheet pan (18 x 26) Pineapple Upside Down Cakes. The techique I use is to first spray the sheet pan with nonstick cooking spray. Then I place the aluminum foil over the sheet pan allowing it to be at least a inch higher then the edges of the sheet pan. The foil keeps the mixture from spilling out when using a shallow sheet pan. After baking I let it cool down and then flip it. Peeling the foil carefully off the cake.

It depends on how large you want the cake to be. For exmaple, an average sized cake might be 20''x16''x9''x6''. If you are having an exceptionally large crowd, you would then want to increase each cake pan size by 2'' or 3''. The same idea applies to a decrease in size for a smaller crowd.
A standard cake mix yields about 5 cups of batter, and a 12x2 inch cake pan takes 8 cups of batter. If your pan is 3 inches deep instead of 2, you will need 11 cups. So two cake mixes will be about right...you'll have a bit left over with a 12x2.
