McCormick (a popular food product company) lists the ingredients for its celery flakes as "stalk and leaf" of the celery plant. I highly doubt a toxic leaf would have been approved to be sold as a spice. A small number of misinformed people are going around spreading this silly rumor. Celery is edible, root to tip.

In order to lose one pound, you need to burn about 3000-3500 calories. So yes, if you eat nothing BUT celery you will lose weight. But if you eat few stalks a day without proper diet or exercise, it's not going to make any difference. You do the math how much celery you would need to eat in order to lose 1 pound.

It is botanically accurate to call a celery "stalk" a stem, usually with leaves attached, as well.

It is not bad for rabbits to eat celery. It is healthy for them.

If you are looking in your larder and unable to get to a store, a bit of celery seed should bring flavour. If your store is out of celery you could substitute celeriac, or if its an allergic thing perhaps another spice root vegetable like Fennel. You could also sub in Leeks.
