Why were Easter bunnies and eggs allowed to symbolize something as sacrid as the resurrection of Christ?

They weren't and they don't. They're pretty obviously pagan fertility symbols; unlike with a lot of other pagan symbolism ("Christmas" trees, for example), I don't think that anyone has even made a determined effort to try to co-opt bunnies and eggs as some sort of tortured Christian allegory since it would be so transparently false.
