There is a very basic way to defrost a ham. All you have to do is fill your sink up with luke-warm water enough to submerge the ham. You don't want really hot water because this will actually start to cook the ham. Just let the ham sit over night in the water and it should be ready to cook in the morning.

Generally deli products can last for a few months if they're not open from their original package. Once opened, the items can easily spoil in a matter of a week or less. I would say you have approximately 3-5 days depending on refrigeration.

If it's packed in a vacuum sealed can, such as an Armour Star Ham, it will last an incredibly long time. The can is dated, but WW1 canned rations were opened not so long ago, and were as edible as the day they were packed - and this was with early 20th century canning methods which are inferior to today's! However, if the can is dented the canned food shouldn't be kept for long. Also, if the can is bloated it should be discarded immediately.
