You have to go to settings on apple.com on the computer or on your ipod or on your iPhone.

If you're using a PC (Mac I'm not sure about), go to whatever folder you want to arrange your pictures in. Since iTunes arranges pictures by date, you need to change that. iTunes arranges the pictures by the earliest date to present, example, if your pictures range from 12-24-10 through 1-2-11, the first picture taken on the 24th will be the first one on the iPod, and the last picture taken on the 2nd will be last on the iPod. So when your in your folder, single click on a photo and at the bottom of the screen an info pane will show up. Click on the "date taken" part and change it to whatever date you want, and it will show up in your iPod in order of dates.
