It is Japanese and means 'master instructor' usually used in the martial arts for a mid-grade instructor.

Tough to answer. One of the conditioning aspects of martial arts is to be able to continue after being tagged. To a certain extent it is a matter of working through the fog and reacting naturally without having to think about it or actually engage the brain.

There are hundreds of kata in karate and there are dozens of styles. Every style has different kata's so it is just impossible to name all of them in order. But Shito-ryu karate consists of nearly half of all the kata's.
