2) cook them in salted water (enough to cover potatoes + abit more)for about 20 mins. counting from when water boils
3) test the potatoes to see if they are soft, test with a knife, if they are ready the knife will go through the potatoes ok.
4) when potatoes are done, put potatoes in a bowl, save water
5) then with a fork or potato masher, mash potatoes with some of the boiled potato water, some warm milk and some butter or margarine. Not too much to start with. If you think the mashed potatoes are too dry carefully add more potato water or milk. The mixture shouldn't be too sloppy. The potatoes should be light and fluffy.
6) season to taste.

What does onion weed look like?
the onion weed in my garden has stiff green leaves up to 30cm long. It comes from an underground bulb which can be quite deep -up to 20 or so cms. This bulb sends out underground stolens which soon mature into more weeds. It also sends up a white flower and this quickly seeds to spread the weed even further. I understand there is an organic method of control- putting a drop of oil in the centre of the plant, but I don't know which oil is safe to use for the health of the garden.
