For several reasons, not the least of which is that it is made with egg yolks and might be topped with meringue - all possible sources of Salmonella. Another reason would be for ease of serving and appearance on the plate - a chilled pie would be firmer.

I have a slice of pecan pie that I left at work for at least a couple weeks. It was left in a tupperware container inside a thermal lunch pack in the refrigerator.
I just pulled it out and am taking it a couple bites at a time.
First two bites:
Smell is 95%. Taste is 90% with little to no staleness (what I would expect from being left out at room temperature overnight).
I will wait 30 minutes before proceeding to finish the slice, but I am extremely surprised by the condition. I was expecting nothing short of mold growth. I will let my stomach be the final judge before continuing, so if I do not update again, everything was fine!

yes i believe they do spoil because i have a pecan tree and when they fall I pick them up to snack on and some are rotten.-they are shriveld up and are really black never taste them though it tastes like dirt.
