Why do Christians reject Muhammad as a true Prophet?
Because Christians don't believe in the Islam religion and if they were to believe in Muhammad they would be Muslim, not Christian.
But if you question why they don't become Muslims, some of them will tell you that they do not believe that Muhammad was a prophet because his moral standard was not very high when you compare it to Jesus.
