When did the toucan become endangered?
Different parrots become endangered at different times, there are lists on the internet that you can look at to find dates about a specific bird. However if by any chance you are trying to find the Cuban Parrot and when it got endangered i do not believe it is anywhere over the internet.

What can people do to help Toucans?
Toucans live in the Amazon rainforest, and are primarily threatened by deforestation. There are several ways we can help them, as well as countless other species from the Amazon.
1. We can buy Forest Stewardship Council (FSC) Certified paper and wood products. Unlike most paper and wood products, FSC Certified paper and wood products are harvested responsibly and sustainably, which means that they don't contribute to deforestation.
2. Buy shade grown coffee (if you drink coffee). A lot of coffee is grown in the same area as the Amazon. Shade grown coffee tastes best, but sun grown coffee has a higher yield, and therefor pays the farmers more. So they slash and burn the forest to make room for their plantations. However, shade grown coffee grows beneath the large jungle canopy, and then the people are using the land, so the jungle is protected.
3. Donate money to groups like the World Wildlife Fund that work to conserve endangered species.

What would happen to the fossil records if a toucan became extinct?
Nothing would happen todays time. Fossils are evidence from the past. If the toucan were to become extinct there would be no fossil records of this specific generation of toucan. The fossil record would be the same only you can look back to see what random mutation occurred that was not adventageous causing this species to go extinct.
