What does tartaric do in wine making?
Tartaric acid plays important role in the wine chemistry, by lowering the pH of fermenting must, grape juice or wine to a level where many spoilage bacteria cannot live, and acting as a preservative in combination with SO2. In alcohol production microorganisms selection to some extent depends on the type of carbohydrate present in the media.
