Sugar occurs naturally in grapes and it gets transformed into 2 things: alcohol (which we want) and CO2 (which we do not want). Yeast transforms sugar into alcohol, therefore the more sugar you have in unfermented juice, the more alcohol your wine will have after fermentation (up to a certain extent). You can measure how much sugar your juice has using a hydrometer.

Why is it important to maintain a stable temperature when making wine?

The purpose for keeping a stable temperature is to allow the yeast to perform it's best. When you leave yeast in colder temperatures the fermentation process slows down and can even go dormant. If it is to hot, it can kill the yeast culture. You want to keep it a little be higher then room temperature.

Why is malting not carried out in wine making?

Malting is done to barley in order to convert the starch to sugars so fermentation can occur, there is no barley used in wine making so nothing to malt! Grapes are naturally high in sugar so the yeast can begin the fermentation process unaided.
