South Africa -- and other diamond exporters -- send diamonds off to be cut and polished. Most of this work is done in India and in the Netherlands. Although there are other places in the world where cutting and polishing diamonds takes place, notably, New York City, New York.

To earn foreign exchange, namely money. Also foreign demand may be higher for goods than local demand, or the price may be better. A better question would be why does South Africa export raw materials and then import manufactured goods instead of manufacturing these goods and then exporting them. (All things equal raw materials are of a lower value than manufactured goods- so SAfricans are paying more for goods made with their own materials).

The answer to that question is the same as it is for why unemployment is so high: Skills Shortages, Unfavourable Labour Legislation and Ineffectual Government Bureaucracy

China, United states, The European union and The United Kingdom and South America. However, with the recent recession in Europe, South Africa began exporting fruits to Thailand and to the fast growing economies of it's closest rival Africa in search of a growing markets.
