Lemon juice does have acid in it. If you are taking about the lemon juice directly from the fruit, then of course. Even if it is in a juice, lemonade for example, it is still an acid.

Lemon juice does not HAVE acid in it, but it IS an acid.

Lemon peel is dehydrated lemon zest; the outer skin without the white membrane. Using lemon peel out of a bottle will save you time in cooking when the recipe calls for lemon zest.

Not exactly, because as far as I can find, there is no such thing as 'citrus' acid; however, lemon juice DOES have CITRIC acid in it.

How do you make zest?

You fine grate the peel of a lemon by rubbing the lemon on the grater. You only want the peel. Lemon zest is simply the yellow part of the peel on the outside of the lemon. It has an intensely lemon flavour and is used to add flavour to many culinary dishes. To make lemon zest simply remove the yellow outer skin of the lemon with a grater or zester. Try to avoid taking off to much as the pith (the white part under the yellow skin) has a very bitter taste and can leave a dish with a bitter understate.
