In most recipes you can use an equivalent amount of dried fruit, like raisins, nuts or another flavor of chips like peanut butter, cinnamon or vanilla chips. Obviously this will not work in a recipe that calls for melting the chips to get a chocolate flavor in the recipe.

If the recipe calls for melting the chocolate chips- you can use 3 tablespoons unsweetened cocoa powder, 3 tablespoons sugar and 1 tablespoon butter or margarine for every 1 ounces of semi-sweet baking chocolate needed.

They dip the crispy wafer into the chocolate once or twice. pretty simple actually.

You can use any kind of chocolate for this--chocolate chips, chocolate bars, anything. Baker's came out with "dipping chocolate" in 2007 which was just chocolate chips in a fancy container. Chocolate formulated for melting (such as Mercken's, available in the candy-making section of most large craft stores) may be marginally easier to work with, but really any chocolate will do. Using a double-boiler is the most tried-and-true method of melting chocolate, but it's also easy to do in a microwave. There are instructions on melting chocolate on the backs of most chocolate chip bags. Generally you'll want to microwave it in a glass bowl for about 30 seconds, stir, 10 seconds, stir, 10 seconds, stir...and so on, until all the lumps are out. If it gets too stiff to deal with, just put it in for 10 seconds and stir again.

I'm a gluten free persom myself and plain milk, white, dark chocolate and ones with nuts in and most of the desserts brand shouldn't but check the label for barley, rye or wheat but it might be disguised into morre complicated form eg an easy to notice is BARLEY malt extract malt also normally has gluten glucose normally doesn't though it sounds like it does

Its both parts actually! The dark solid part is what makes it taste like chocolate, and the white part is the cocoa butter. Therefore, dark chocolate has lot of the cocoa solids in it, but hardly any cocoa butter. On the other hand, white chocolate is mostly cocoa butter, but hardly any solids :)
