Vampire bats are opportunistic feeders. Normally animals are much more available than people since people tend to stay inside at night (when the bats prefer to feed). People are also much more likely to react to a bat landing on or near them than say a horse or a cow, so again, bats are much less likely to feed on them. With that said - there are plenty of accounts of people out camping in areas within the habitat area of the bats who wake up to find one has nibbled on their ear or toes or other exposed skin without them waking up.
