Why can you eat blue cheese when it has mold?

It is typically considered as a mold which it is but it is not your typical mold this type of mold is acually really good for your digestive system because it is a type of good bacteria that causes the mold which happens to be a form of pennisillin but don't worry if you are allergic to pennisillin because this is not an atibiotic formula of pennisillin because this bacteria is naturally formed of course with some human interaction but we don't acutually make it or in other words change it genetically, there are also other cheeses with this type of mold

Can you substitute mozarella instead of cheddar cheese?
You can but Monterey Jack undictincted flavor compared to mozzarella. That is why Monterey Jack is usually blended with another cheese like colbly to make colbly jack cheese. It is also blended with jalapeño peppers to make pepper jack cheese. So in my opinion I wouldn't substitute them because the flavor of just monterey jack lane is very different than mozzarella.

Cheese is a very hard thing to explain. It's more of a try it - then you'll know kind of thing.
Basically though, it tastes salty, smooth, kinda tangy, but it's really good :) I suggest you try it yourself.
IN ADDITION:Many different things influence the taste of cheese. There are cheeses that barely have a flavor at all and others that that may not get past your nose as they are very pungent. There are mild, medium, sharp and extra sharp grades of cheddar. There are blends of Colby and Monteray Jack cheese called Co-jack which is a popular choice for resturants to put on nachos and potatoes and even burgers. There are cheeses that are moist like Ricotta and dry like Feta. There is goat cheese which will be distinctively different and many strong cheeses like Muenster.
