Why don't you import genuine Mennonite cheese from Cuahutemoc Chihuahua Mexico?

Don't know but would really like to have some here in Miami, Florida. Used to buy it in Juarez years ago but everything has changed. Wouldn't really appreciate getting shot while purchasing Mennonite Cheese in Downtown Juarez. Its really a shame they don't export it to the US. Would allow those of us who are from that area to enjoy it while sitting on the beach here in Miami. Please forward any information regarding purchasing this cheese in the US when possible. What is meant by Liquid Rennet?

Rennet is an enzyme that is made by baby calves to digest milk. It acts by cleaving off the tails of Kappa Casein that surround the casein micelle, which allows the casein micelles to get closer to each other, thus causing them to bond together and precipitate. Rennet can be made by either harvesting out of the stomachs of the boy calves, that the farmer does not want and so sends to the freezing works. It can also be made synthetically using microbes. Hence you can have calf rennet or microbial rennet. Calf rennet is generally more effective, but it costs more and there is a limited supply. Rennet is used in the dairy industry to make both cheese and rennet casein.

When does cheese become unsafe for consumption?

There are several variables, including the type of cheese, the condition in which it's stored, the humidity level, temperature...etc.

In short, hard cheeses such as certain Cheddars, Parmesean, etc, stay safe for a very long period of time. If mold appears, simply cut off the affected section and consume the rest. Since the cheese is such a solid mass, the mold will not penetrate through the entire piece. If the surface is hard/discolored, cut it off and consume the rest.

Soft cheeses such as Brie or Camembert should be taken a bit more cautiously. If you see mold on the inside of soft cheeses, it's best to throw them out. The soft consistency of these cheeses makes it very easy for bacteria and mold spores to quickly penetrate the entire interior of the cheese, making it very dangerous to eat.

In short, hard cheeses could be good for a month or more, but soft cheeses may only last a week or two, once you open each.
